Pinot Grigio

Pinot Grigio is a white grape variety that finds its most optimal expression in the vineyards of the Adige Valley. The cold alpine currents favour the grapes’ accumulation of aromatic substances.
Pinot Grigio Simboli has a strong straw-yellow colour, with an intense and persistent bouquet of ripe pears. It has a dry, fresh, well-structured flavour.

Vinification process
Hand-picking from 10-20 September, soft pressing, controlled-temperature fermentation in stainless steel tanks, ageing on lees for about 5/6 months before bottling.

Fish appetisers, grilled white meats, but also excellent with a light shellfish tempura.
