Picked by hand in the first ten days of October. Soft pressing in an Inert atmosphere, static settling of the must, temperature controlled fermentation in stainless steel tanks, ageing on lees for approximately 5/6 months before bottling.
Excellent with starters featuring fish, shellfish and salmon. Also very good with white meats and vegetable dishes.
