Trentino DOC

Riesling is a wine appreciated for its harmonious taste and surprising longevity. The extensive daily temperature ranges during the ripening period, along with the mineral composition of the vineyards best suited to this grape, help develop a perfect balance of acidity, sweetness and alcohol in Riesling Simboli. The intense aroma of rose, rosemary and resin, and the bright straw yellow colour with greenish nuances, complete the organoleptic profile of this wine.

  • Vinification

    Picked by hand in the first ten days of October. Soft pressing in an Inert atmosphere, static settling of the must, temperature controlled fermentation in stainless steel tanks, ageing on lees for approximately 5/6 months before bottling.

    Excellent with starters featuring fish, shellfish and salmon. Also very good with white meats and vegetable dishes.
